How would I go about collecting logs from systemd services using Cribl Edge?

That depends on where those services are logging information. If you want to capture the logs generated by systemd about the service, you can use the Journal Files Cribl Edge source. If the service generates log data to the Linux filesystem (ie. apache will log access and error logs generally to /var/log/httpd) I would suggest investigating the File Monitor Cribl Edge Source.
